Biochemical and biological processes take place during the 4 main stages of the brewing process.
Stage 1: Milling
Our barley and wheat comes exclusively from local malt houses. Out of a concern to reduce the impact of our purchases on the environment, we source our malt supplies from the Château de Beloeil malt house and the Ets Soufflet malt house in Prouvy.
We use Pilsen, Caramel, Munich and Chocolate malts and wheat in the brewing of our beers. The quantity of each type of malt used varies, depending on the recipe. The malt is then ground during the milling phase by a specially designed malt mill.
