Biochemical and biological processes take place during the 4 main stages of the brewing process.
Stage 5: Bottling and keg filling
Before being bottled and keg filled, the beer (apart from the wheat beer) is filtered in order to remove the yeast from the first fermentation. It is then heated to 20° in order to encourage fermentation in the bottle while some new yeast and a little sugar is added. The quantity of sugar used allows the desired CO2 saturation level to be obtained in the bottle after fermentation.
